AN OPENING STATEMENT

In 2010 we set out to bring a new and distinctly American voice to the world of single malt. Each of the whiskeys in our Heritage Collection exhibit the fundamental intention of the Westland house style that emerged in those early days: a balanced, barley-forward whiskey that honors tradition but also moves it forward in a new way. All are made from 100% malted barley, fermented with a unique Belgian Saison Brewer’s yeast and matured in a variety of cask types—leading to new and distinctly American flavor profiles. From that starting point, each expression offers a variation of a house style that departs from expected conventions of single malt whiskey in their own way.

Ten years later we continue the pursuit but our whiskeys and house style has evolved. The Heritage Collection stands now as our opening statement on the world of single malt as it existed a decade ago. Today the landscape is different. The American Single Malt Whiskey category has set firm roots. A renaissance in raw materials is afoot. Terroir in whiskey is being embraced rather than denied. New possibilities are being explored worldwide.

While there will always be a special place in our hearts for these three whiskeys, our expanded stores of whiskey now offer new possibilities that take us even deeper into the provenance of the Pacific Northwest. We have officially ceased production of American Oak, Sherry Wood, and Peated. What is out in the world now will be the last of its kind, available while those supplies last on shelves.

HERITAGE COLLECTION


AMERICAN OAK

In our pursuit of an authentically American single malt whiskey, we bring our signature five-malt barley bill together with new American oak casks—two things practically unheard of in the old world.


SHERRY WOOD

We have our sherry casks shipped whole, which is unusual in the business of whiskey. This provides a sherry character that is still incredibly vibrant in this whiskey, but we always ensure the barley notes have an equal voice, something rarely done in Scotland.


PEATED

While many peated whiskies follow the very traditional model of 100% peated malt to displaying a raw and heavy smoke character, we work to build on this tradition with new world sensibilities.
