Maris Otter is a winter barley varietal used in authentic British ales that lost popularity because of its lower yield and poor disease resistance. Known for its biscuity flavor, Maris Otter has experienced a small resurgence in the craft brewing scene. Matured in a Heaven Hill ex-bourbon cask, the spirit distilled from this malt shines as another example of the treasures lost by an industry too focused on efficiency over flavor.

The second release in our summer series features Pilsen style malt from Best Malz in Germany. This Pilsen style malt is a combination of several barley varietals—Avalon, Catamaran, Quench and Solist—uncommon in the new world. Typically used to brew Pale Lager beers, Pilsen is known for its light and delicate malt flavor. We matured this spirit in a Heaven Hill ex-bourbon cask for just over four years, allowing the grain notes space to express themselves alongside the gentle influence of a used cask.

The final cask in our summer series features Golden Promise, a spring barley varietal most often associated with Scotland. In the 1970’s and 80’s this malt was commonly used for Scottish ales and single malt whiskey. It fell out of favor as newer varietals with higher yield and greater disease resistance were developed. The Golden Promise spirit, like the other releases, was matured in a Heaven Hill ex-bourbon cask allowing a unique opportunity for comparison.
